VH offers good opportunities to relax and enjoy some music, one while sailing like you said, another could be during a storm, when your and your crew are waiting for better weather and all enjoy some music.
I like the way Sea of Thieves manages instruments, someone starts playing a song (could be random) and the other players take their instruments and join the ensemble.
All instruments will play the same song, no need to actually play the instrument with keys and so on. Each instrument will play it's own sound, adding a new instrument sound to the ensemble just by using it like any other item.
It could be one of the 4 basic Viking instruments (Wind, Brass, Strings and Drums) like a Horn and/or a Flute for Wind, Lur for the Brass, Lyre and/or Tagelharpa for Strings and a leather Drum.
I really hope the Devs take this into consideration, it a fantastic immersion option to have.
