If you're getting regularly occurring crashes, then I suggest doing manual saves after any major activity (like loading up your boat inventory - but don't spam it as the game will just ignore the request if it's been too soon since the last save) until the cause of your crashes can be fixed. Also, I suggest making sure your saves are set for local storage rather than cloud storage (you can configure that from the character select screen or world select screen - for single-player or client-hosted worlds, at least). Things have improved a bit in the past 4 years, but this game still has occasional (rare, but not non-existent) issues with cloud saves.
EDIT: It's come to my attention that the manual "save" is an admin command which means, for one thing, that it's not available through chat, but you also don't need devcommand access in the console. It also requires being an admin (automatic in single-player IIRC, requires having your Steam/Xbox ID in the admin.txt file in multiplayer).
I have a 12th gen intel I9 12900k which I'm starting to think is the problem as I'm playing Valheim on an older system and it's working just fine .
I would do that as the only tweak for now. Then if it continues, set FPS limits to 60 outside of Valheim via graphic card control panel and confirm those work. Crashes during saving can occur on unstable system when CPU/GPU quickly transition from low to high FPS, which can happen during saving due to main game thread pausing to collect data for saving (that stutter when saving occurs).
