Stone towers can get fairly high, but you need a lot of support to do it. Stone is supported by raised terrain spikes, iron (any sort, including iron-wood beams, cage parts, iron gate, etc), and trees (count as ground, but easy for enemy to destroy).
If you dig down to bedrock and raise to the max while using 3M ceilings, you can get close to 10 floors of stone only and more of wood on top of it without too much weirdness. If you go all in you can get a few more floors, eg pine trees planted on raised terrain...
the new slanted ironwood beams open up a lot more possibility.
having made a couple of towers, I am done with it. Its fun for a while, but gigantic and more than 4 level homes are exhausting to run around in and decorate and all and impractical. Ive downsized a lot, 2 - 3 levels of 10x10 floor tiles is all I need and everything is right on hand. Good luck with yours ... if you get high enough, you can get snowy roof :) Here is the biggest one I did, pre ML.
