If that doesn't fix it, check your temps and voltages; "black screen of death" is often a hardware problem.
You mentioned your fans turn on when this happens... check your fan controller's settings, it sounds like it's turning on too late. This Early Access game is relatively unoptimized; most people's fans turn on as soon as they hit the main menu... or are running all the time, but ramp up to deal with the increased heat under load.
From a software development standpoint, it's not surprising what Valheim does it and others don't. The reason has to do with the trigger. Valheim uses Unity 2019 (I think that's the year). So it's dependent now on which aspect of Unity 'while talking' to your PC is triggering the crash, the black screen, the XYZ issue.
For example, I've been playing Valheim for nearly 2 years now. I have never had any game breaking bug while playing the game. So the question is, why does the crash, black screen, XYZ issue happen for some but not for others? This same question is asked by developers while trying to debug their programs. Look through every single game on Steam that uses Unity, or Unreal, or some other game engine. I can guarantee you that someone would have said the exact same thing you just did. "Interesting that no other game does this, but 7DTD, Stardew Valley, World of Warcraft, SWTOR, xyz, abc, etc, etc, etc does it."
Now with that said, Valheim is not fully optimised at this point. What does your HWInfo64 or Speccy say about your GPU/CPU heat while running the game? Also, via MSI Afterburner or your preferred fan curve setter, have you tried setting your fan curve accordingly to match sudden GPU power spikes?
Reference point: when I first played Fallout 4 all those eons ago, I notice that when entering some areas in the game, my GPU fan suddenly goes super fast, my game gets a black screen, then the game crashes, and I have to restart my entire PC. My solution was to set the fan curve where the lowest temp received 40% of the fan speed, and at 80 degrees Celsius and up, the fan was set at 90%+ on a gradual curve.
Mind you, someone else with a Black Screen issue resolved their issue after finding out it was their PSU causing issues, even though none of their other games triggered said problem. Another person mentioned they had mods they forgot to remove, removed them, and the game ran fine. Most black screens were caused by faulty drivers or outdated drivers. In the past, I've helped my cousin with a black screen while trying to play Need for Speed Underground, by replacing his RAM.
