Are you running any mods or just vanilla?
I know if you have mods on and one or more of them need an update it will cause havoc and give some of the same symptoms
Are you just hosting the game on the same computer you are playing it on, or is it a dedicated server?
I know a lot of people have figured out that one of the issues while hosting is not enough memory installed. Which causes the computer to become unresponsive, lag out and sometimes even restart.
At minimum 16Gigs of memory but if you are hosting that means that 16Gigs is running everything on your computer. Then when you add in you playing the game, hosting the game it could be eating most if not all your resources.
A friend of mine started doing this last year. He had 16Gigs and had this happening often. He put in another 16Gigs and it helped a lot. He would get some lag, only for a few seconds or so but hasn't had any crashes since.
Unfortunately, we all know this game is in desperate need of some optimization and the Devs seem to be more worried about adding content vs making what they have run as smooth and bug free as possible,

Hey do you still have the issues nowadays?
Can you tell us how much ram you have?
I'm not sure, I took a break from Valheim for a while.
That being said, though, I was sort of on the low side with RAM (8 GB RAM. My brother said that's good but I looked into it and decided it probably isn't for most of the games I tend to play).
I'm now at 24 GB RAM (two sticks of 4, two sticks of 8) and other games are running much, MUCH better.
I would wager that my low RAM was likely the cause back when I was having this problem, but I can't be 100% sure until I get around to testing it with the new RAM whenever the Hildir update goes live and my friends and I pick up Valheim again.
