You don't get it. The whole discussion is related to (as you said yourself) OPINION. Your looking for validation for yours and you got some so it's time to go do something useful.

I wouldn't play this game in VR if I lost a mod that enhanced the games graphics either. I wouldn't however care playing this game in non VR if I lost visual mods, as in that case the graphics don't affect my immersion or fun. I would continue to play regularly no problem.
I take it you only play this game in VR? Or will you mind to play non VR? I think I need to know the answer to those questions to really tell where you are coming from.
Man, I really appreciate you cooler people that don't go straight into attack mode but are really here to discuss. For me, I started playing vr last xmas, and I really was totally blown away. For instance, Half Life Alyx left me in awe; graphics are insanely realistic. After playing games in vr, I am pretty much done with flatscreen games; no comparison in immersion factor for me. So, I am pretty much only into games I can play in vr. If I was to play flatscreen, graphics textures are much less important as everything I am looking at is not life size. I should have stressed the vr part better.
As far as me I actually kind of like the art style if it was more realistic like the hundreds of other games in this genre it would look a little generic but I’m also a firm believer that you have two categories you have art style and graphics and what’s more important comes down to personal preference.

The most important thing is that the art style fits the game, which it does in case of valheim or minecraft. High res textures combined with low poly models and little variation in vegetation would just look out of place.

Not that I'm agreeing with the OP, but they did point out that no one can use the Willybach textures since the cloud storage update. So those of us that were using it for HD graphics, aren't able to. I'm just pointing this out to you in case you didn't know.
I do NOT agree that the game is "ugly" in vanilla form... I greatly appreciate all the work the Devs have done, and I especially appreciate their decision to use graphics that almost everyone can load up and play.
I used the Willybach's HD texture pack because I liked it better than the vanilla textures (just my preference, and I have the VRAM to do it), but if I'm going to complain to anyone (I'm not) it would be to the mod dev of Willybach's for not updating it yet to work with the new update. LOL!
I bought the game and loved the quick download, small footprint, short loadtime... AND then appreciated the balance of low-detail (lowres) but clear (pointsample) with gobsmackingly gorgeous light and atmospherics.
I have disliked the screenshots of those using hires texturepacks as they look too perfect/artifical -- like veneer; not enough grime and smudge, which isn't an issue with the lowres.
You could have simply made a back up copy of Valheim before updating (you had 2 weeks warning there was a patch coming) and continued to play Valheim with said mod. Just an FYI.
