Not all of us can or even should switch our machines to a release that recent.
I also have an "old" Linux distro, Debian 10.13 Buster, installed two years ago. And Valheim server started to crash after the last update for me too, apparently because it's not compatible with this crossplay stuff forced down our throats. I have couple dozen other game servers running on the platform and I REALLY don't want to move all those, and the underlying ecosystem I've built for years, to another dedicated server just for Valheim.
The solution is stupid simple! Just delete the stupid libparty.so file from valheim_server_Data/Plugins folder! After that the server starts just fine! :D Yes it complains about it a lot on the log, but who cares! xD

I can confirm that this workaround allows my Ubuntu 18 Linux Valheim server to start.
I'd also like to point out that the latest update (0.211.8), installed on both server and client, does *not* fix the problem. So hopefully there's an official fix still in development.

I'm using a docker image based on debian:bullseye however I have the same issue still on Ubuntu 20 or 22
