My tactic of choice for hare hunting are ooze bombs. Not sure Vikings had ooze bombs, but the game does.
Setting some stakes scattered in an area you frequent, such as when you setup a small mistlands crop farm, will occasionally yield some carnage.
Just remember, to spawn creatures, you have to run around because they won't spawn when staying in one place.
Spike traps at an area you frequent (your fungus farm, sap extractors) can Garner a few too with little effort.
An aoe weapon like Stagbreaker or the Iron Sledge can be more effective than other melee weapons for when they dart around your feet though you still have to be quick with your strikes.
The speed and lack of drop of crossbow type weapons can make them more useful for Hares once your Mistlands progress lets you craft them.
So I'll just add one thing: An atgeir works quite good to hunt hares, due to it's range.
If you want to shoot them from a distance, you will have to set up quite a few wisp torches all over the place, so you can see them from further away. Or, if you are lucky, you might find a flat area that is free of mist already, with hares spawning there. In that case, this might be the place to hunt.
Passive methods are infinite but around dvergr settlements they die all the time from spikes
Pufferfish do slay hares!
But to catch and line the fish up might be too much for the common viking..

Often underestimated is to build your sap extractors or fungus farms in biome transitions from Mistlands to Plains.
Deathsquitos (or Plains mobs in general) are brutally good hare hunters.
Late Mistlands:

If you are very good at it, you can also use spear/bow.
But even with very good reflexes, you have a lot of misses and it's more tedious than with anything else listed.
Still a possibility if you need to save resources.
Overall:
Ooze bombs are the best active hare hunting strategy by far.
You normally have an abundance of resources to craft them.
And since the latest update, you can craft them in stacks.
Even if you miss, you usually still hit somehow, due to the area damage and the duration over time effect.
And after my last visit to the mistlands I can only recommend to bring a spear there anyway. It seems to be a pretty fast way to kill a Gjall (just stand beneath it (a bit more to the back part if possible) and throw the spear up into the weak spot, repeat as soon as the spear drops down)
As first I tried the Ooze Bombs (as they were mentioned so often) and wow.... those work very well :-).
Now I know how a viking catches a hare.... ;-).
