I think they are not in the game because they would be so powerful that they'd always one-shot even a well geared player
the reason for lox is simple : they spawn in packs of 3. but the game counts them as 1 monster spawn. so all 3 would spawn with 2 stars which would be a bit silly.
as for the others : no idea.
FYI, each Spawn of a Monster has its own check for level up. It is not group wide.
Quite frankly, not everything needs stars-on-them-thars (Seuss-esque there)
I think that would only getting worse, knowing that a 2* Deathsquito only have to look at you to kill you......

I reckon they did it, not only cause they're hard, but drops more than one dart, and Lox meat is OP
you do not need a mod to add stars to the creatures.
"Spawn deathsquito 1 3" spawns one deathsquito with two stars.
Each star doubles a creatures health and increases its damage dealt by 50%. A 3 star lox would be the same as fighting a creature that has more health than the Elder that can do more damage than Moder.
Okay, now we need a mod to add Sneeches to the game!
Just lost my entire herd of prize (one-star) boars to a raid. Didn't see what happened, but something wanted fresh pork bad enough to smash down the gate to the pigpen and slaughter the whole herd. RIP Ham, Bacon, Sausage, Pork Chop, and your progeny (who were going to be slaughtered anyway.)
I think the changes I just made to my base defenses changed the pathfinding when enemies come out of the adjacent Black Forest, and that put them in visual range of the pigpen.
Given how hard it was to get two trophy pigs into a pen without a harpoon, I decided to cheat myself four new boars. So I spawned them in the pigpen. I was standing in the pigpen.
Said boars did NOT spawn tamed. Even kitted out in the full Wolf armor and Drake helm, getting out of there was a challenge. They swarmed me and kept staggering me. Finally made it to the ladder.
If I'd been in my hunting outfit instead (fully upgraded Trollhide armor) I would probably have died. And my corpse would have been in the pigpen. With four very unhappy one-star boars.
I've occasionally seen a single stray Lox by itself a few times, would be the perfect way to add starred Lox to the game. Considering they usually spawn in groups of 3.
No starred Greylings either, strangely.
