The nice thing about the mod is everything is turned off by default, and you go into a simple config file and turn them on and change the values yourself, so you can decide exactly what you want and don't want, and how drastic the changes are. The mod also syncs up everyone else to its configurations, meaning your friends just need the mod installed, and their mod will follow whatever the host has set.
A thought I've had is that: I don't think I truly like Valheim, but I love Valheim Plus.
So, my must have QoL mods that I won't play without and a few mods that actually make the game more fun for my play style.
the QoLs mods are all client side so you can use them with with any server;
Triple Bronze; 2 Copper + 1 Tin = 3 Bronze, also adds some single ingot smelting options for other ores to the Forge so a full smelter/furnace isn't always needed.

Minmap Discover Radius. increases the area of the map around the player that gets revealed as you explore.

Mute on Minimize. mutes game's audio when the game's window is not focus. Great for when you need to tab out of the game for a Zoom call or want to watch Youtube while waiting on a batch of ores to proccess

Extended Player Inventory, adds dedicated armor slots plus three 'belt' slots for arrow/potions/foods/anything. The 7 extra slots make a huge difference IMHO

Display Date time in HUD, shows you in game day and time, so you know when to head for bed or need to be ready when leaveing a dungeon at night

Zarkow Turret Defense. Adds automated gun, missile launchers, and utility drones (Gun, logging, gathering, healing, repair) to the game. Makes soloing much easier for players like myself who are not really very gud. And it's fun to watch Trolls and Bosses get blasted by the heavy turrets and missiles

ValheimRAFT-Continued. Adds a raft that you can build on, anything from a basic exploration/recon skiff to a huge ocean liner. No build Limits or restrictions so you can have crafting stations, ovens, smelters, etc. on board.

Side note: using ValheimRAFT and Turret Defense together is FUN. Being able to build an armed landing craft to get you to the Ashlands is also a huge help when soloing.

Ones that I have starred are the ones that I tend to use on most Mod Profiles. If you want some extra challenge, add "WildBears" - just...stay away from them at the start.

There is an interesting mod I use called 'Seasons' (as opposed to Seasonality) that adds visual as well as stat and environmental modifiers for seasons in game. It is something to plan around, when to plant and harvest, when to explore and sail, etc.
I have personally found that many, many mods are redundant (I really don't need 7 bow types in the Meadows) or OP and so many mods have bloat you cannot trim.
Mind you just changing the difficulty sliders on the vanilla game can dramatically change your experience. A no map/no portal run on hard is a nice starting point.
You will find many of the suggestions above are what some consider QoL if that is what you are looking for. You may want to better define what you mean by 'more interesting' for your next run. Do you want more challenge? Less perceived grind? Both?
1. VillageNPC - Adds villagers to your village that just roam around and occasionally say something.
2. PlantEverything - you can plant blueberries, raspberries, mushrooms, etc (was tired of noting down bush locations on the map and running whole continent once in a while to gather some berries)
3. LongshipUpgrades - Adds few very nice details to your longships that doesn't break immersion and stays absolutely authentic to game style. Also the ships now look much cooler.
4. BetterWards - configurable wards that have tons of options and they're finally useful in solo game now
Combined with Dinosaurs, it can get pretty intense.
I don't think I've had that many deaths pre-Eikthyr on any other file, lol
