I sleep if I need the sunlight for better visibility while exploring, fewer enemies, or to advance time on things like smelting ingots or growing crops.
No need to restart. The number of days passed means absolutely nothing.
Worry about # of days = useless

Time passes the same at night as it does in the day, so you can load up all your refiners, etc just before sleeping, and they'll be done in seconds. Plants are also time gated in days, so shortening the day reduces time in the farm.
You (or at least I) can spend quite a bit of time waiting on the weather, which changes every day, so shortening the time that you have to wait on a storm or fog is very beneficial.
"Night" also technically starts at 2 in the afternoon, in that you can go to bed at 2, which is a huge benefit when you're refining a bunch of mats, or waiting on some new plant to multiply.
One thing to keep in mind though in the beginning is the cold effects you so a fight you may win during the day with little risk may be a gamble at night.
