Draugr Villages question
I have one right where I want to build.
If I take out all the Draugr and the spawn nests, can I safely assume they will not return?

You only have to destroy the existing Draugrs and the nests they spawn from.
Then once you place workbenches, the buildings are yours to renovate or remove.
The only Draugrs you will see afterwards are wanderers if the village is close to a Swamp.

I don't think the Draugrs re-spawn but other things might.

I dig a trench around the body pile and the Draugrs (mostly) fall into that. Occasionally there's a Draugr archer who stays on top of the pile and shoots. I'm wondering if I can build a roof right on the pile so the archer slides off into the trench.

I like to repair a house they are in a put a stairway close to the end away from the door and take out an upper section of the wall and shoot in. Walk around or jump in occasionally to collect the drops.

My friend likes to dig out a pit, they will spawn and drop down if you remove the house around it. Just make sure it is deep enough... that said, I find it harder to shoot down at something rather than shooting straight at it through a window.

They are in a meadows so getting raw meat isn't too much of an issue... just never enough thistle...

You can raise ground to fence them in. They can and will tear through built structures.

Be sure to put up a workbench after you killed the spawning piles and repair the Wraith's Thrones in the church like building then disassemble using the wooden hammer. You get iron nails which can help you build the big long boat.

I rebuilt a village around 2 spawners that were in enclosed structures, just in a shabby state...did indeed turn it into a sausage factory...lost one spawner[first one farmed] by inadvertent shots at the units spawned in the small structure.

I snuck in around the few 'guards' outside the buildings and completely palisade walled the structures in on their outside edge, snappin' happily as I went around the buildings, effectively killing the LOS and casting a ray in my direction, ;). The key to the whole operation...

Second one was the Great Hall structure, complete with hearth. I've managed that one much better, draw them away from the spawner so I don't destroy it and direct them to a gauntlet of palisade walls leading to a pit, which they never get to. They do chew on the structures I've repaired and built new, but it's minor and none have escaped, yet.

Usually get 2 at once, at the spawn rate. Just as I kill the second one, the spawner generates another, and so one. Elites, 1-*, 2-**, all of them seem to spawn.
