Either way, it wasn't very hard for me personally to find them (first newly explored mountain biome, and two frost caves). Just make sure you find large biomes with obsidian cause that's where they can spawn.
Also I'd like to mention that we are lucky this can occur at all, from most of the games with frequent updates and old worlds like Terraria or Minecraft, new things don't spawn in old worlds.
You'll either need to go to a different world, or use a mod to "regenerate" your mountain areas. This is what we did on our world, and it worked fine.
For me it took some searching but the once cave I have found was up high but still on the edge of the mountain biome.
To be honest if you have top tier gear and have found the trader, which you obviously have having explored the entire planet, then the caves are going to be a little underwhelming as they are design to fit into a toon that is not yet ready to enter the plains
We have started a new game to get a better sense of how they feel when you go in from a fresh start.
But it´ totaly makes sense that the world has to be generated around the player, even if you never actually go somewhere. Guess they could update their description, since removing the fog of war is not the real issue here.
This means I have to find a mountain biome, where I did not sail right next to it along the coast.

It is really, really good and very exhaustive, but requires some extensive reading. Don't worry, you can't break stuff unless you really want it.
It can completely reset your entire world, but that's thankfully not the default setting. ;)
Requires use of the console, so you need to have "-console" in your command line for Valheim.
