Valheim Plus + Console on Steam Deck
So I got Valheim Plus / BepinEx to load on Steam Deck via the launch command
"./start_game_bepinex.sh ; echo %command%"
from Reddit.

How do I add the '-console' to this linux command to have the console enabled as well?

If you're talking about steam launch options then I believe they're seperated by a simple space.

-option1 -option2

Not an expert on this, but my guess would be that you have to edit the start script start_game_bepinex.sh. Find the place where Valheims .exe is started and add the launch option there.
