How to build an open sided shack/tower roof?
I'm trying to build a thatch roof for a tower so that I can shoot out of it. However, anything placed on of top of a pole immediately crumbles. I just can't figure out for the life of me how to build an 8x8 construction plot with a roof supported by poles not having any walls. Any advice?

check the stability on the poles. when you hover over them with the hammer, it tells you how stable it is (from blue to red, blue being perfect, red being the limit). if it isnt stable enough, you need more structures connecting it to the ground, like walls or angled poles.

Place half walls with half-height vertical posts on top of them, then run the 2m horizontal beams off that, then place your roof elements on the cross beams. Alternatively, use the 2m vertical and horizontal posts direct from floor and ground-to-tower supports, and place your roof elements on the cross beams. Without a doubt, one of the hardest parts of building stable roofing on elevated structures in Valheim is that it's best done while standing above where the new roof will go. That, and well, the game's stability system is rather more draconian than, say, the one in Medieval Engineers.

Also, sometimes the game just won't feel like letting you build in a spot. I had a supported section of a large lodge (a roofed balcony) that wound up needing to be fully buttressed with angled supports all the way to the ground before it would let me place a piece of roof. The whole rest of the roof was fine, but that one spot forced me to place an extra 200 wood worth of reinforcing and buttressing.

Also, sometimes you just need to slap elements together as fast as possible to produce a stable whole, since you can't turn the stability system off and it frequently won't let you have half of a stable build up for the twenty seconds it takes to finish it.

Ok i've tried everything. NOTHING WORKS. This stability system is driving me nuts! Any attempt to place a roof on top of a tower eventually crumbles, no matter how many supports I place. I've even tried using gates in place of truss supports.

There's a limit to how many pieces away a block can be from a block touching the ground and still be "supported". Try the 4m poles if you've unlocked them. With the 4m poles you should be able to build 20m high or so before stuff starts turning red and crumbling.

if you use stone then build onto the stone with wood it will allow you to build bigger structures.

Trying to build a roof on that thing is a real pain in the butt because parts which would normally fit together nicely on ground level crumble after a few seconds.

Put 4m/8m (I forget ... the long ones) pillars/logs on the corners of your tower if you have unlocked them (made of core wood from pine trees). The limiting factor is the number of parts from the ground. The pillars/logs are a very long part so it will essentially half the number of parts to your roof. The best thing about them is that you can just plonk them on your corners easily there.
