Like Garrish wrote, there is a transition period where you will need coal, food will be the only way to get it. You can make 3-4 fires next to each other and place several meat cookers on top for easiness. I don´t recall this period being very long though, so don´t stock up on coal this way, just make what you absolutely have to.
But yes, if you cant find 10 making some Meatcoal is something you can do
Late game, when you have chests full of coal, and you turn multiple Lox meat into coal. That's the best coal; it should be saved for something special like making signs that remind you not to overcook your food.
You can place multiple spits on a fire. I like 3 because it's not too cluttered, but you can fit many more. When you unlock chairs, place one very close to your cook pit. When you hear the sizzle, you can activate the cooked food and it'll drop right into your inventory because you're close enough.
(if you do this and you catch on fire when you stand up, try rotating the chair and remember to exit from the safe side by strafing away to exit the chair.)
