While both games have a modding community, much of the mods available for this game are not very gameplay-changing, but for 7 days, you can get some VERY substantial modpacks that really change up the game a lot, and add so much to it, similar to Minecraft.
I know you already staid you bought this game, but 7 Days to Die is a great game that you should definitely check out sometime.
Not having played 7 Days I can't speak to how empty Valheim is in comparative terms, but in an absolute sense I'm happy and satisfied. Because resources can be scarce there's a real sense of satisfaction finally encountering them. I'm retired so it isn't as if I'm in a rush to beat it or anything. Got nothing but time on my hands, heh. And it is a truly massive world.
