If you play alone you can go in Steam into right clicking your game -> Properties -> Betas and set your patch, disabling steam update feature if you are really afraid of losing your progress.
Personally I've been playing for last couple weeks with no problems and patches are not too often (2-3 a year?) and the update that is in beta is rather small, so you can either start now or wait for that patch to leave the beta and then you should have at least couple of months of peace :D
Hoja is also correct a recent update "Ashlands" changed the worlds edge Height map. so people who had built in/near that area had buildings that dissassembled since they were no longer on the ground (as i understand it) closer to the centre nothing changed
So world files are in 3 (at least places)
1) Single Player using January 2023 versions and beyond
C:\Users\***\AppData\LocalLow\IronGate\Valheim\worlds_local
2) Single Player using Steam cloud saves here
https://store.steampowered.com/account/remotestorage
3) now Single Player and Multi Player ALSO apparently save to here:
C:\Program Files (x86)\Steam\userdata\yourSteamIDnumber\892970\remote
