How much time does it take before an items despawn?
Like if I drop a stack of iron and teleported back to my base to get my ship I need nearly 20 min sailing, will it despawn?

I think it is true only for items dropped near workbenches. Items without workbenches nearby despawn in an hour or so.

It tooked me like 20-35min depending on the wind last time

If you're going straight there you should be fine! But I'd still drop down a workbench just in case of storms or other insanity -- it's only 10 wood, and you can be SURE that way. With games like this, planning for the worst case scenario makes a significant difference.

Despawning takes 1H for items
Sleeping in the bed speeds it up tho.

Items have to be away from player or any base-related buildings to despawn.
If you stay close to item, or they are in range of base building then it won't despawn.

List of player-base buildings:
fireplace bonfire hearth portal ward workbench stonecutter artisan table forge smelter blast furnace charcoal kiln windmill spinning wheel fermenter bed dragon bed sconce standing torch (all 3 of them) hanging brazier
I have encountered some dropped items in middle of nowhere that I dropped there like weeks ago. Those items have survived like 400+ game days and weeks of irl time. Even many server restarts. No one have facts about how long it takes for items to despawn.

if you keep them in player or player-base range then they are going to stay there forever
Why sail? You can decostruct the ship, portal to your last location, build a workbench, build your ship and sail home. Deconstruct it in shallow water, so you can pick ALL your matz.
