I tend to use even 3x eitr food in most cases, but then I play with both the blood magic staves so I can use the skeletts as a distraction and can kill most foes with enough eitr before the skellies get into too much trouble.
Another thing I tried was 1 stamina + 2 eitr. That still makes the death raiser usable (but it takes a bit more patience) and you can run a bit more. Also a normal weapon as a fallback can be useful then, as you can still use stamina for fighting then, if you run out of eitr. Haven't used that strategy much though.
Health food and blood magic contradicts each other a bit, because blood magic uses 60% of current health on use. Also the shield from staff of protection might be more of a lifesaver than the additional food hp... so usually I don't go with health food if I play Mage.
There is one thing to do for magic, that doesn't have to do anything with food, but I still think it's important. Set up a greydwarf nest as a training camp. It's quite easy actually, you can just raise ground over the nest (it doesn't break, it just stays beneath the ground and is safe from unintended hits) and set up a safe spot where you can have your wiking sit untroubled.
Then you summon your skellies near the nest and let them fight the respawning greydwarves. That way you can bring your blood magic to a viable level. Your shield will absorb 5 more damage with each level of blood magic, so a level of 20 will make your shield already absorb 300 instead of 200, which can make quite a difference.
