I have restarted many a world, have yet to see anything with a sizable about of flat land without having to do a lot of work. Occasionally you can get swathes of a meadow, but they are usually pretty hilly. Depends on how big a build area you're looking for.
A much more viable solution would be to flatten where needed and work with the shape of the terrain everywhere else. this will give your village the added benefit of not looking boring because it's all just flat land with square buildings on it.
in Valheim? XD
In the starting area, look between the pillars of the bosses eikthyr and The elder and walk straight in that direction. You will find a big lake. Connected to this lake is a large, more or less flat area with access to the sea.
NOTE: Check if the instances are high for you. Because for me it's high even without building it, I don't know if it's because it's an old seed.

It makes things a bit harder but gentle elevation shifts between the buildings add some charm and authenticity.
