Chimneys usually work if they are 2x2 wide and straight. Even if you use a hearth, a 2x2 chimney will be able to funnel out the smoke.

Smoke will pass through thatch and dissipate but it takes an extra 4 meters of height to do that. This historically accurate lodge design uses that trick. There is a fire at each end of the lodge. The ground floor is smoke free but the attic is unusable.

that said..
- a high ceiling with an open bit at the top (like the 45 degree roof caps are open on the ends) is sufficient.
- that means a simple 2x2 wall 'square' chimney with the above roof caps will work fine.
those are 2 simple designs. If you pretend smoke is a 2x2 sized bubble as you design, it will work out better. you can't easily make a tight 1x1 that works, even for things like the evil hot tub.
you can shunt smoke with roof tiles and other objects, so the hot tub and hearth can all go into one 2x2 chimney with a level of shunts to guide it all to the tube.
my approach for a while now has been to put the fire on the top level of my home and just let it rise up and out through the natural gaps the roofing tools create. I found that chimneys were really cramping my homes and far more trouble than they were worth. I have also stopped using any kind of smoke that isn't my cooking fire, like wall torches.

just let the smoke do what it does and the high ceiling disperses it eventually. There is a cloud of smoke up there, sure, but it doesn't get dangerous to breathe until more than 4 M off the floor, and I don't care:
