shipwrecks-shaped stones - worth it?
It requires a lot of digging, often down to the water level, and all I've found so far is bones.

I know you are supposed to be able to find also a chest and coins, but so far... nothing.

My question is... Is there anything special to be found in these wrecks, or am I better off simply going after skeletons and dungeons?

no need to dig. use a sledge (stag breaker ftw) to find the chest by looking for damage numbers above zero where you hit, and once you find it, keep slamming until the chest breaks and the treasure appears above ground. the chest is usually either in the middle or all the way to one end, in my experience

Coins. Occasionally you can find a silver necklace which is an ingredient you need to make a decorative treasure item.

Thanks UncleAcidic, that makes it so much easier and actually worth it.

The ships themselves are a good early source of finewood, if you don't have bronze

OP meant the standing stones forming a ship-like shape in the Meadows, not the shipwrecks in the Black Forest.

But otherwise, your statement is definitely true. They're just quite rare.
