you do not need the troll set. Its one of the first things I do in a new game is whack a deer with a club. Just takes patience and practice to know when to stand still and when to move. Yes, you will alert them at first, as you learn.
On the other hand, just running into them and slapping them on the butt is often the most effective way to hunt them. Even after sensing you, they have this odd "freeze" state, where they'll stay idle for 2-3 seconds before actually running away. I don't believe I remember them acting like that before, so I guess some AI update broke them.
