The amount of meat depends the amount of stars an animal has.
No * animals give one meat and skin;
1 * animals give two meat and skins;
2 * animals give 4 meat and skins.
While that's the same for the wild animals, the fact you can control the breeding instead of relying on the Sadistic Number Generator (aka SNG) makes the butcher knife so valuable.

I usually never bother with one and just use friendly fire since you can also get skillups using ff, but being able to switch out the skeletons you dont like is important enough I do believe I'll start including one in my blood magic auto-trainer.
I always take out dvergrs by aggroing other mistland creatures and introducing them to each other and then finishing off the injured leftovers.
