How do I fight Sea Serpent solo?

get it to chase you towards land and it'll stay close sometimes - black forest and some of the enemies there will also join in the fight. there's a harpoon you can make too - hard when you're sailing alone but if you get close to land with the serpent chasing you - harpoon it there and drag it as far inland as you can
you can use bows and arrows, it is doable. the problem can be the ship you are using. do not go in the ocean with the raft, the carve can take some damage and go fast with the wind, the viking ship with full health you do not need to worry.
with an "special" item it is possible to bring it to the shore and take the scales and trophy, not only the meat.
"Special" item is because I do not know in which stage of the game you are and I do not want to give spoilers
I am still making my way into the swamp area crypts, working on a full set of the bark armor. Issue is I have nowhere close to land to drag it to because everytime I encounter it , its by a swamp area and it would be a nightmare to fight it + everything that swarms you on the swamp shores especially at night...
1.) Find a serpent on the open water and get its attention.
2.) Make sure serpent is aggro'd and bring your flotation device to a complete stop.
3.) Fire your crossbow (or bow) until serpent is one attack away from dying.
4.) Let serpent get within biting range of your flotation device.
5.) Jump at serpent's head and fire kill shot in midair.
6.) Pray to the gods and goddesses you're able to loot its trophy and scales before they sink.

My serpent encounters are usually at night; dragging it ashore is asking for Ticks and Seekers to get involved, so I don't bother with the effort. End game weapons and equipment help make quick work of it, too.
My current boat is the Carve, I will try next time but certainly not going out into open waters with a full inventory again to try to fight one.

until you get iron tier cooking supplys dont bother hunting serpents. its not worth it till then.
especiallly not with a karve.

On the other hand, since they are rare, getting a stockpile early is nice too. And on the plus side, you don't have to worry about dangerous mobs spoiling your fun when you head to the shore.

I found two crypts right next to each other (is that decent biome roll?) I just need to make sure to not go there at night or get caught in the terrain with an abomination chasing me. oohh yea need to ferment some stam and health pots too and max HP food & min 100 fire arrow.

Regarding #5. You can actually stand on the serpent's head. I prefer therefore to land on it, then throw a spear straight down for the deathblow. Can usually pick up at least three scales, and it is possible to get the trophy too, but I'm having crap luck with that lately.
I've beated 5 bosses and i'm in mistlands now and i never seen any sea serpents ( i've been looking for them at night, when raining, at night with rain ) and they just do not spawn at all, i think there is something wrong about them or there is a very low chance to actually spawn them.
( i've seen them only when the game first hit the steam with ea, if i remember it correctly )
Might need to slow down, a longship sailing with the wind will outrun one. Moder power is not your friend here. And their aggro radius isn't very long, so it's easy to just sail past them.

I scan constantly for them while sailing and encounter one around every twenty minutes or so. And most times I have to stop and get its attention.

I recently even had two (a night spawn and a storm spawn) attack me at once.

I have the opposite experience. Constantly getting harassed by them LOL, day or night it doesn't matter, especially on this one strip of ocean that is a direct path for me from my main dock to the swamp areas on my node.
