with an "special" item it is possible to bring it to the shore and take the scales and trophy, not only the meat.
"Special" item is because I do not know in which stage of the game you are and I do not want to give spoilers
2.) Make sure serpent is aggro'd and bring your flotation device to a complete stop.
3.) Fire your crossbow (or bow) until serpent is one attack away from dying.
4.) Let serpent get within biting range of your flotation device.
5.) Jump at serpent's head and fire kill shot in midair.
6.) Pray to the gods and goddesses you're able to loot its trophy and scales before they sink.
My serpent encounters are usually at night; dragging it ashore is asking for Ticks and Seekers to get involved, so I don't bother with the effort. End game weapons and equipment help make quick work of it, too.
especiallly not with a karve.
I found two crypts right next to each other (is that decent biome roll?) I just need to make sure to not go there at night or get caught in the terrain with an abomination chasing me. oohh yea need to ferment some stam and health pots too and max HP food & min 100 fire arrow.
Regarding #5. You can actually stand on the serpent's head. I prefer therefore to land on it, then throw a spear straight down for the deathblow. Can usually pick up at least three scales, and it is possible to get the trophy too, but I'm having crap luck with that lately.

I scan constantly for them while sailing and encounter one around every twenty minutes or so. And most times I have to stop and get its attention.
I recently even had two (a night spawn and a storm spawn) attack me at once.
I have the opposite experience. Constantly getting harassed by them LOL, day or night it doesn't matter, especially on this one strip of ocean that is a direct path for me from my main dock to the swamp areas on my node.
