Rocks/flint/copper/... : do they respawn?

As title says, do rocks, flint, copper, ... respawn or once you pcik/harvest it at that specific spot they will never respawn?

They don't respawn, you'll need to find more of them. The only respawning rocks are the little stones you pick up, same as branches.

Stone (the little ones that you click once to pop out of the ground and then click again to pick up), flint, and fallen branches, yes, respawn, as do mushrooms (both red in the wild and yellow in dungeons), thistle, dandelions, and berries (as long as the bush they grow from doesn't get destroyed).

Rocks (the ones you have to pick), trees, berry bushes, and ore deposits (copper, tin, silver), no, they do not. Trees, however, can be replanted if you have the seeds.

Trees don't quite produce enough seeds to be self-sustaining, unless you increase the resource drop rate in general. To regenerate mining nodes you'd have to make occasional use of the Upgrade World mod.

This is false for Beech trees, they produce enough seeds to replant more trees. Accurate for the others though.

You can literally plant trees all day with no seeds at all on hammer mode as long as you unlocked the seed prior for said tree. (and as long as there is enough room)
