No doubt there's a mod that makes that configurable, but no, not in the game Settings or you'd already know of it.

Yes, it is. I'm using 85 mods to add what's missing, fix some dumb things, abstract some of the grind and repetition, and especially to modify combat so that my fumbly fingers can mostly handle it even on hardest difficulty.

I actually already had a mod that could do what you want with a little extra work: Valheim Player Editor. It's not even a mod, rather it's an external utility, and so it doesn't require BepInEx or a mod manager and it isn't launched with the game but run separately. It edits saved characters, including their baseline health, stamina, etc. It only does this per saved character; it doesn't modify the defaults that the game applies at creation, so you must edit every character that you want to be enhanced.

What you could do, if you're struggling (I feel your pain), is create a local game (non server / dedicated) and use console commands to max out your skills. Maybe even set enemies to EASY in the settings. No need for mods, mods are icky :p

Also, get those meals prepared. Some of them combined can get you well above 100 HP

Third party editors are prone to mistakes. If the developers update the game and change a variable or constant, you've got a situation where the editor will not be updated and it breaks the save file. Users may also get confused with the labelling, as the editors can be very clunky and slow. With console commands, you simply type something like "Setskill skillname 100" and you're done, if that command does not exist (it doesn't btw) then you will get a response saying command not found. Simple as that. No harm, no foul! Took you less than 20 seconds to call up the console menu and type it, too.

When playing in Mistlands on a shared server I've gotten over 200 hp

That being said, weirdly I enjoy having to snack to safely work on the upper floors of my constructions.

The Valheim Player Editor has been updated yet again today, perhaps prompted by the .30 game update. They're on top of it and it's a nice utility to have. I've added it to the Vortex Dashboard for the game. https://www.nexusmods.com/valheim/mods/1536
