For one, you now get items that you would otherwise need to defeat certain bosses for. It breaks the overall progression tree and turns the game into Diablo!
A magical iron sword does not break the game, but it might make the current zone a little bit easier. The rare drops from the next zone, mountains (including the craftable silver gear) will still be superior, hence you constantly want to move forward.
The problem is there's not really an incentive to farm 2 star enemies, its not really worth it in thee current zone
I am aware, but i prefer the vanilla experience, and developer's vision (quality of life mods excluded)
Like, what if Frostner drops from a Greydwarf the moment a player is still in the Black Forest.
While Frostner isn't a good weapon to deal with The Elder - unless you look at the total damage it does - it's a heck of a good weapon to face Bonemass. Even at Tier 1.
And because of that, players may progress too fast, just to be killed due to being unprepared for the next biome.
Same goes for armour. Having Fenris or root armour while in the Black Forrest makes a player somewhat overpowered. Especialy when that root armour piece is giving you poison resistance. Everything the Greydwarf Shamans throw at you - in both ways of speaking - isn't important anymore. Poison resist potions aren't needed anymore when having that particular piece of armour and with a player being over confident, they run into the Swamp, thinking nothing can harm them. Just to die the moment they encounter a blob or an ooze......
IMHO, it would be better if you get the occasional higher level MATERIALS drop.
Considering you need multiple of that material to create something; like multiple iron to create a tools rack, an anvil or the stone cutter; players finding iron when killing a Greydwarf or Troll in the Black Forrest might at some point being able to unlock next tier items, but without the proper amount of iron, not being able to build them.
So in a way they know what to expect, but still need to do the same things to progress beyond the next level boss.

You are one of those people who always want more but already get tired of it after a few weeks and start complaining about how bad the game is
Clearly you don't since you're asking for something the devs will never add.
It is in the game already in a way, the thing you seek. If you want trophies, some are very rare and you need a lot of time to get just one.
The looting aspect is somewhat realised in dungeons/set pieces. There are chests with loot or loot on the ground. That loot often being valuables.
Getting power boosts too easy too early would go against what seems to be the core premise of the game - work hard to reap the rewards. While it is annoying to see skellies use swords and bucklers but not drop them as usable items it also is in line with this overarching premise. Id argue this is exactly why valheim has been such a success, it abandoned the known and tried formula of item drops, the "loot".
It's also possible this game simply isnt your cup of tea and that's fine too.
A compromise i would like to see tho is more variety in "vanity" item drops that only function as trophies. so this sword a skelly has, maybe that would make a nice cosmetic item to mount on a wall with a relatively low drop chance.
