Yes. In fact I used to employ this very concept with a string of cave trolls to level up weapon skills. The secret there is just to wear great armor (so that you're regenerating as quickly or faster than they can harm you) and leave each cave before actually killing them so that they're back to full health by the time you cycle back around.
