Also, modded Minecraft is amazing for some of the things you mentioned. Especially a mod like Twilight Forest. Stuff like Tinkers Construct makes weapon REALLY fun and interesting and customizable.
I'm a bit confused that you found Skyrim MORE open than Valheim. Skyrim has questlines that cause you to know exactly what you're "supposed" to do next. Valheim basically just throws you in, and hope you survive. Even the quest aspects were just general goals, and you kinda had to figure it out yourself.

When it comes to suggesting something, the top 2 survival/building games out there are ARK and Valheim imo, so try Valheim. It has mods, too, even better so: on Steam already.
I don´t know why so many people love this game. Played it for two hours and it was one of the worst gaming experiences of my life. After trying to figure out what to do and how, then while I still didn´t know what the game, with horrible graphics, wanted from me, no items lying around, nothing..and, a mob of like 14 pixel guys was fighting each other, then started chasing me. I died with no clothes and no weapon, naked after so much time in game. Nothing made any sense.
Satisfies the "start with nothing" and "gigantic open world" and "I could build here, and wow what I just built is amazing", but it's just as engaging as Valheim.
(I know, no Vikings, and it's a factory game, but it's so gooood)

oh this game, I didn´t like it at all - the enemies 1 year ago (hopefully better now) had the AI of a magnet - and it was extremely time consuming to build even basics. The very positive reviews "prove" me wrong - as a Valheim lover I comment just to share my impression

On the other side, this game is a lot like no mans sky... but that is space themed and a little bit of a shooter (combat is ranged instead of melee, mostly). But it has open world, building, survival, start with nothing and grow in power, Its basically everything you asked for except vikings and possibly the combat depending on what you really wanted there. NMS is weird in that its difficulty even on hardest settings is inverted... its brutal for a short time, then gets easier and easier until combat and survival on hostile worlds is easy, and eventually, trivial. One issue is that your base isn't as important as it is here, its fun to make them but not required to play (its required IMHO for valheim).
