There are game hosting services as well, so you don't have to mess with it yourself. Like gPortal.
In the end, the cost is yours.
https://hub.docker.com/r/lloesche/valheim-server
It handles all the Steam interaction, updates, backups, even modding if you want to do that.
You need to learn a bit about Docker, but it might actually be easier than figuring out how to install a Valheim server, and Learning about Docker might be more useful in the long run. You can probably find a Docker image for most any game server, and, of course, you can run all kinds of non-game software in Docker.
What are you hung up upon?
Btw this guide[valheim.fandom.com] is quite straight forward and rather easy to follow. Don't forget to forward the ports 2456-2458 TCP and UDP in your router.
Dedicated server seemed like the winner.
But alas, my local LAN IP won't work for the server no matter what I do. Only the invite code or online IP work.
Nor will my world load into the dedicated server. Its a new world every time no matter what I try.
Spent a whole day on it, and I do understand PCs...
So our only option is to pay for a server to play the same world in the same house?
That is pretty lame.
Just give a heads up on what issues you're having trouble with, and some people will try their best to help you out. (Just have to sort past the trash posts.) Give us a heads up with exactly what you've tried and what isn't working.

I highly recommend GSM.
LAN IP vs. invite code / external is a crossplay/playfab problem.
Just disable crossplay on the dedicated server and connecting to your local LAN IP will work fine (with firewall exceptions of course).
Dunno what you're doing wrong with the world there. It couldn't be easier to just copy your world.db/.fwl to the proper server folder and tell the server startup (script) to use that world name. Done.
And "new world every time"? Are you running the server in a (windows) guest user account or something? That's the only reason I could think of right now for that behavior
Sorry to disagree with you there but you don't seem to understand PCs - at least not to any degree I'd count...
I get not knowing about that stupid crossplay/playfab behavior but not even trying to disable an optional networking feature?...
Not to mention whatever problem you're having with your world (at least not without a lot more information).
I had to edit a configuration file in a text editor to pick the world it used and the password. If none already exists, it'll generate one with the chosen name.
I had to add 1 extra step to the process because Linux. On Windows hitting launch should just launch.
Then I worked out how to do a modded server. Same as regular modding, copy files into the right locations
