They didn't just make late game biomes, they added stuff all along your journey from the start.
To answer your question though, if you've explored a lot of the world, then a lot of the new stuff won't be in the game as it won't spawn certain things in areas that you've already explored.

I see now you don't want to play in your old world, just bring your fully upgraded gear dude to a new one.
But you all do know you can use your old world just fine, too?!
It's just that by default all the already explored areas won't be updated (maybe tiny stuff only)[1].
But every newly explored area will be generated with the up-to-date world-gen-algorithm of your current game version (= with all the new stuff).
And even updating already explored areas (to differing degrees) is no problem with Upgrade World[valheim.thunderstore.io]

If it's been after H&H the updates are more about the world than the character so go explore and enjoy!
One of the nice things about this game is the 'persistence' of your characters across the infinite number of worlds you can create.
Some would argue, even going in nekkid, an existing character with extremely high skills will be a bit OP, but at least players have that option.
None of the changes since you have last played are hard to grasp mechanically (this from a recently returned after a long break player) and as @ZepTepi wrote many of them will also make themselves known to you as you explore (unless you are a read all the change notes since you last played type of person).
My vote - skip the change notes and just play the game and all will be made known.
