Why doesn't the onion want me to pick it?
I started planting onions to get seeds, the first time I noticed that there should be more seeds, I decided to follow it and realized that almost half of the planted bulbs just go underground when fully grown, is this a bug or a feature?

this is on the unmodded game?
Its a bug, if its below the ground and unpickable. If you have mods, I would be very quick to point a finger, because this has never happened to me over a lot of time, lots of farms at my bases, and lots of plants. Not even once.

I play pure walheim.

I have no idea what's wrong with my onion, but it clearly doesn't like being in my garden.

wait a second.
seed onions don't pick the bulb, they sprout a pretty flower and you just pick the tall plant and it spits out seeds. If it has a bulb, its a food onion, and that should poke above the ground, turn brownish, and then you can pick it. If its white, its not ripe.

when the seed onion matures, some plants sink into the ground by themselves, I didn't even interact with them.

it shouldn't be doing that. This is a bug, from everything you have said so far.
I figured it out, I planted onions too close, usually I don’t stay at the base and my garden is not loaded, and when I return all the plants grow at once and the lack of space is ignored and the crops remain intact, because of this I thought that the lack of space only affects the speed growth.

I was just about to say that. Wasn't sure how you thought they fell through the ground, or how'd you'd evidence that - and of course you can't and didn't because that's not what happened.

I misunderstood the mechanics, I thought that it only affects the growth rate, there was simply no problem with other plants.
