Is there ways to dismantle rafts & boats?
I know you can destroy them, but that takes too much time.

middle click with the hammer to destroy anything and get back the mats although the nail will sink to the bottom of where your boat is

Honestly, as your get better and better axes, breaking them down doesn't take much time at all. Just make sure you stand right at the mast to make sure you collect all the materials when it finally does break.

tried, doesn't work, at least, not on rafts.

The answer is no. You have to destroy them.

Drop a bench (1 click), middle-button on mouse with hammer (2 clicks). Done and done. No need to stand there whacking at it.

It is quite stupid.. only thing I can think of is they were worried people would lose their mats by accidentally dismantling them maybe?

Maybe it's an anti-grief feature? People could drop a workbench and instantly dismantle your vehicles with no real defense or ability to react.

You can't dismantle any of the sailing vessels or the carts. You have to break them with your axe. To make sure that you recover all the materials make sure you have both the weight and inventory spaces to recover the materials, make sure taht auto gather is turned on, stand on the mast, chop with your axe. When the boat breaks you will drop into the water but all the materials will go into your inventory. (Your nails won't sink.)

That's what I'm thinking. It would be the easiest way to permanently lose the cargo.

The cargo (regardless of what it is) floats in crates if the ship is destroyed. The crates can be destroyed too though.
