its possible to roof this :) but you have to get creative to do so.
dont get too much into building with wood at the start.... i dont wanna spoil it :)
keep unlocking stuff for now. youll see.
lets just say : the age of stone has mostly ended :)
Don't be afraid to build temporary scaffolding to reach the roof.
Also, I don't think the mountains were ever the last biome. The plains were the last when early access first started.
Also, do use beams and poles. Sometimes it's good idea to use horizontal poles at the joining point of different roof pieces to hold them together, otherwise they might fall.
The key thing to building that you need to learn early is that pieces clip into each other. That allows you to make say a cone roof on a round building, or even just a square roof on an oddly sized building.
with a little overlap you can get it roofed well enough to provide shelter and look good on the outside. Inside, the overlap is a little ugly, but you can hide it maybe, depending on what you really want to do here. Not spiral but simply sloped, its fine, you just follow the slope with your roof tiles.

Only issue with circular buildings is there are no roof pieces to fill a very small gaps if you go over the circle, but inside can be easy filled. You can however stack 2 roofs from each side to fill the gap.
If you wana get a perfect angles, you can use wooden beams, angle them just a bit and place roofs on them.
