You can get lots of copper and iron (and some bronze IIRC) very easily from the Mistlands so aside from few ingots of black metal and maybe silver you don't need to accumulate a reserve to ship metals over there. You can also get a new pickaxe from there, and with moderate mining skill that should make copper chunks fall off at one or two hits (if you only strike a single chunk).
I used this method about 3 days ago and got enough copper from two veins to create and update a bronze mace to lvl 2, a buckler to lvl 2, a cultivator to lvl 3, an axe to level 3, a knife, a forge, the anvils and the cooler to upgrade the forge, enough nails to create the carve and a cart (used as storage), a fermenter as well as 7 sconces.
Total amount of copper needed for that: 184 copper bars in total. Also means 184 copper ore.
I also got a load of bronze in storage for further upgrade of my bronze weapons; although I'm currently mining iron, so I don't see the need of upgrading bronze items anymore.
Anyway...
I don't know how you got to that number of "5 the most", but either you've been doing something completely wrong, or things got reversed at some point, as this method clearly gave me a ♥♥♥♥♥♥♥♥ of copper after completely mining out only two veins in a shorter time as it would've cost me more time to mine out the top of multiple veins.
And as for the about 800-ish stones I gathered as well......
well, those were used to raise an island to defendable levels and have been used to build the stone floor and walls of my main building the moment I was able to do that.

I forgot to add the adze, meaning another 6 bronze or 12 copper making it a total of 196 copper or almost 100 from one vein.
I found 2 massive nodes beside one another on the steep slope of the Black Forest, where it bordered the sea. This actually made it faster and easier than mining on the continent where my HQ was. Sailed a longship up to the shoreline where they were, and nearly half filled up the ship, which I then sailed to my HQ which was on an isthmus jutting into the sea. Twas a hecuva lot faster and easier than carting the stuff found on the starting land mass back to base.
It's like playing a fun game then suddenly you have 4 hours of maths homework to do but everyone swears you get to play the game after that.
Such a strange design, there is no way the devs ever try to play this game solo, clearly meant for 4 people to speed up the process.
How would 4 people speed up the process? IF you are getting this to make gear then you need 4x the amount of resources.. the only thing you would be saving on is whatever bench/forge upgrades you are sharing which are minimal.
the real issue is people thinking they need to make anything out of copper/bronze aside from one axe, enough nails for a couple ships and enough bronze for any station upgrades.. I have always just used upgraded troll armor until I go into iron.
If you're spending hours mining copper, and/or moving it around it in a cart, then you're doing it wrong.
The first time I made a cart in Valheim was the last time I made a cart in Valheim. I really don't understand the attraction of using a cart.
Where are u getting 5 from mining copper in this way still works. Just did this last night. The changes just made it not as easy to do sence the center of the copper node is now hollow and filled with dirt now.
U can move FAR more ores with the cart. Without the belt to increase carry capacity u can only carry about 18 ores depending on the metal. This works very well with wood farming too.
I never mine with out a cart unless in the mountains and now probably the mistlands haven't been there yet sence the update
Example when I'm mining iron I bring a portal work bench and a cart plop all this down right next to a crypt mine it out. Pack up move to next crypt and repeat. Far better than hitting max carry weight and only having about 18-20 ores on me
YOU definitely are not gonna be using a cart in the Mistlands lol.. but there is a lot to mine there.. Black Marble, iron scrap, copper scrap, yggdisal? trees.
From what iv heard about mistlands I have no dought the cart is useless there.
