Did movement speed change?
Is it the animation or the player speed that changed? Maybe both? Or perhaps it's a bug? I don't like the change, personally. Gives the game a different feel like you're genuinely slower.
Comparison between previous and new update: (Sorry for the graininess.)

I was at 100 carry weight (out of 300) and I don't think removing all items from inventory changed anything, including un-equipping armor.

It's probably related to your mods. Without mods it does not feel any different than it did last year.

Mods.

My mod (VRM) only changes the playermodel, is the 1st clip on the imgur what it's like for everyone else's speed, or the 2nd one labelled "before update"?

I have the same "issue", but I'm not using any mods. I get the first clip a lot of times, but if I equip my player it goes to the second clip. Running will sometimes change the pace. Haven't figured out how to keep it like the second clip which is what it use to be all the time.

carry weight don't matter unless you're over. it's your armor and weapons/shield. just holstering your weapon and shield vs having it out makes you 10% faster. i always do work around my base in troll armor since it has no move speed penalty vs padded armor

The change in movement speed happened after the update. I did not have this issue before. My player always "jogged" whether I had a weapon in hand or not. And yes, movement speed does change a bit depending on what weapons you were holding, but this isn't the case with what is currently happening.

armor / weapons / tools (depending on which they are) reduce your speed by a percentage, including leather armor. It DOES reduce your speed when you're holding a weapon versus not.

Otherwise, it's mods.

Vanilla w/ troll armour feels slower walking, but that could be because stamina drains so fast now you can't even fight a handful of greydwarfs without having to try and walk away to recover.

I get the 2nd clip when my player runs with a tool or weapon in the "ready" position. I get the 1st clip when moving hands-free.

Look again at the video. I'm not sure if this is how Valheim worked before the update but stride length is affected by what you are wearing and holding. If I wear leather armor and move hands-free then I can cover 20 stone floor tiles in about 16 strides. If I wear padded armor and hold a hammer I cover 20 stone floor tiles in about 20 strides. Those additional strides makes it appear to be moving faster but actual distance/time is better when employing fewer strides. A nice optical illusion.
