Report a translation problem
You should have:
1. A complete set of level 3 deer armor (lvl 2 might work in a pinch).
2. A level 3 wooden shield.
3. A level 3 flint axe (or other weapon of your choice).
4. Be fully rested, so you don't run out of stamina too quickly.
5. A full stomach, preferably on deer, boar and honey.
You need to:
1. raise your shield when Eikthyr attacks and tank the hit,
2. attack Eikthyr when he's not attacking.
Eikthyr should then be easy to kill.
In regards to your problem getting killed over and over... did you build your shelter close to Eikthyr's altar? Probably a bad idea, as you now found out.
I would move to another place on your starter continent and start over. Shouldn't take too long. Once you have the required prerequisites, you should be able to easily defeat Eikthyr and then you can move back to your old place.
Eikthyr is by far the easiest boss, and is there to teach you the boss mechanics of this game.

Edit: Just to hammer this in a bit more: Having a full stomach on the best food you can get is CRUCIAL in surviving this game.
Try sneaking away first if you can, although i assume you might not be able to.
In order to Sneak, press the Left-Ctrl button (default), and make sure to not run out of stamina or you will stand up again and stop sneaking. You can just sit still for a while and gain stamina back while ''sneaking'' (crouching).
Assuming that wont work, your best bet is to use the trees and natural terrain to block Eikthyr's movement. You are smaller and can move through places Eikthyr can not, this gives you some chances to regain hp, stamina, and gain distance as Eikthyr is faster.
Using natural terrain to get away from Eikthyr, you need to pick up wood laying on the ground (sticks) as you are moving away. This allows you to craft the Hammer, and then build walls to block Eikthyrs movement, as well as a bed or base if you get the chance.
Dont try doing the building and collecting all in one go, if you want to make this work dont be afraid to collect wood first, then die from Eikthyr. Next run collect the death marker with your collected wood. And eventualy build something that has a roof, a bed, and a campfire.
Once you made your makeshift ''base'', Die to Eikthyr or lead it away, and you should be able to rush towards the base you made putting enough distance between you and Eikthyr so you can sleep in the bed and set your spawnpoint.
You cant sleep in a bed if there are enemies nearby, so take that into account.
If all fails
You can make a new game/map, use your same character or a new one, collect some gear like a bow, armor, and ofcourse food. And kill Eikthyr by using your geared character in your previous map.
You can freely switch characters between maps.
Thats all i can come up with, i hope it helps in some way.
I would personaly argue that a game like Valheim that is not finished and does not take these situations into account (yet), would not be considered cheating if it allows you to actualy play the game again.

To the others: Yes, of course you can kill Eikthyr with far less equipment... IF you happen to know what the f... you are doing.
Obviously the OP is new to this game and needs a more surefire way and level of preparedness to get rid of 9V-Bambi.
FYI all bosses are set to Hunt Player in their AI.
Eikthyr DOES follow you everywhere. I did this several times with the Elder where it WORKED.
Apparently it does not with Eikthyr.
That is a bummer, and I would, as @Aimee suggested, use another world to recreate the equipment required, get back to your old world when properly prepared and make mincemeat out of 9V-Bambi.
And yes, you can kill him with lvl 1 deer leather pants, lvl 1 rag tunic, and a lvl 1 crude bow with wood arrows. And a lvl 4 flint knife. Food was deer, raspberry, honey.
I had no rested bonus, as would've the OP when they would freshly log back in to their world.
I still not suggest the OP does it that way, as it requires some knowledge of the game.
Thanks for the response. I was geared up, flaming arrows, etc. I just got tangled up running with boars chasing me and lost situational awareness and focus. I had him to one-half health an fell in a ravine where I was a restricted in movement.
