You cant die from starving or thirst
Its more a exploring , crafting and building game
Food here only rise up your hp and stamina handycap making more easy fighting enemies or explore
They should be rebuildable no problem... and ofcourse you can build defenses but the bigger attacks require your attention. So far with my friend we havent lost anything from our bases ever... but we have always responded to those attacks so we made sure enemies didnt level the place down. (i dont think you can lose the materials, you can pick them back from the ground... just have to rebuild)
Also there are some "automated" defenses you can create yourself which keep the base safe from smaller threats. Its always beneficial to build main base in the starting area... traveling wont be a problem later on and the first area is by far the safest.
Valheim is much easier in that regard since, like has been mentioned, you cannot die from starvation or thirst, and even I have gone very nearly 300 days without dying once.
Once you learn the game, and as long as you're careful, it's not too difficult to avoid dying. I can't speak for others, but I know pretty much all of my deaths have been because of recklessness, not paying enough attention, or stuff like that. (Not counting deaths when I was still learning the game.)
Three basic things to keep you alive (plus obvious things like don't get hit too much or fall off cliffs):
- Keep your HP and stamina up with food
- Always be aware of what is around you; some dangers can be sneaky or sudden
- Don't overestimate yourself, or underestimate enemies or even the land itself (Very hard when starting out.)

just try valheim and check if its your cup of tea
also i recommend checking YT vids
-Always have the "Well Rested" bonus on. Helps with health and stamina regeneration, it also has a hidden exp bonus as well
-Being cold (at night) hurts regen, better to be warm and around the base at night, especially in the early game
-Same with wet, drop a fire and rest a bit to get dry and reset Well Rested if possible
Bad world and progress? Just take all your favorite materials and weapons and bring it to another world to have a better head start.
