play around with it awhile and watch the wind icon you will get it.
you can get stuck with a bad wind in the middle of the ocean and not be able to go where you want so be careful
That little white arrow on the mini map *is* the wind direction. While using a rudder the boat GUI also shows wind direction based on your heading, and you can easily see if the wind is against you or not.
You can NEVER get "stuck" no matter which direction the wind is blowing. The first foward speed, and the reverse speed, are rudder only. It doesn't matter which direction the wind is blowing when you're using those. You may not be able to go quickly, but you can always head in the direction you want to go.

You can always go in the direction you want but you can't always do that with the sails up.
A LOT of bad luck I guess...
