Also food like berries respawn.
Big stuff like mineral ores, ore deposits, etc. do not. But given that a copper deposit can produce 200+ copper, it's really not an issue. Same with a silver vein. Dig the whole thing out and you'll get 200+ silver.
If you need wood, plant trees. You can plant them anywhere really and if a few in-game days you have the tree you need to harvest wood from.

Most likely so.
Most single items like rocks, branches, flint, mushrooms, berries, and thistle will usually respawn but some players report bugs with berry bushes that are not regrowing the berries.
