generally recipes are pretty hard to miss
the ones I feel it's possible to somehow miss are related to guck, ymir remains (trader stuff) and elite draugr head, everything other is pretty automatic (you pick up stuff on the ground -> you cut trees -> you mine ore -> you explore dungeons -> you smelt ore into bars -> you progress -> stuff unlocks)
some stuff that can be missed would be related to rare drop like "chain" (uncommon in dungeons, but if not lucky then you will have 200+ iron and 0 chains tho)
currently you can't craft anything from golem's crystals or flametal so nothing is missed there :D
You can also... use debugmode
Temporarily see all recipes -> check if there are any you don't have -> hide them -> confirm with your real recipes whether you miss them or not
first enable console using -console
then start game
enter world
press F5
input devcommands
input debugmode
now, press B to get all recipes anywhere, they are also free and you can also upgrade anywhere for free (It's literally all recipes, cultivator, hoe, hammer, crafting stations)
the hammer/cultiv/hoe update their lists instantly when you press B
In case of crafting station you have to exit crafting station and press B
to disable the all recipes for free just press B again
to enable again press B again
etc etc
press Z for flying
press K for killing all mobs around you
