plants - yes, they attack em if they are a valid target
had a test running where i planted carrot seed plants around my house - let them fully grow - and only got the one near my front door destroyed (where the enemys are approaching from) the rest is still intact (for 80 days now)

I don't think they'll go out of their way to destroy one plant if there's a big building nearby on which they'll want to focus.
Some structures, like rafts, boats, workbenches, and portals, may be deliberately attacked by enemies if a player is not on their radar. The rest is collateral damage.
INTERESTING so plants do not trigger Mobs, but can be destroyed due the collateral damage as you said
When you finish digging a copper vein all the way to the bedrock, round out that hole into a pit, and farm in the pit. Nothing will be able to reach you, and if you throw a couple workbenches on the cardinal points, nothing will spawn inside.

It doesnt work for Onion, carrots or anything else that you put in ground as they will get destroyed.
