Can I use new mods on an old world?
Just wondering, I've put over 100 hours in the game without mods and was wondering if I could use mods on my old worlds or would I have to start new ones? And should I use a different character for the mods or can I use my character between mod and non as I please?

You can use them on existing, i would back it up though first, just incase.

Yes, the vast majority of mods don't alter the game world so they're safe for all worlds. If you download one of the mods that includes different items/weapons/armor (not textures, but entirely new objects) then that world requires that mod and wont really work well without it. I don't know how well their error handling works with non-existent items so they may not exist in the world if you quit using the mod (buildings might fall, you might be naked, etc) or it may just crash trying to load it.
