uh... no, stamina is an integral part of the combat design where you need to use stamina-management to be able to survive most enemy encounters. Also, you can get more stamina by combining certain food items. It would be the same thing asking Dark Souls to also get rid of their stamina system, as Dark Souls does quite the similar thing with it.
So many ways to buff it.
You know you can even build a fire in the middle of nowhere and use 'x' to sit next to it and get an 8 min rested buff to keep your stamina regen up and offset cold/wet.
Without having to mind your stamina, it would make the game super easy.
It should get buffed.
There is a drawback anyway to consider. So its not like its free.
For something that needs to be fermented, its horribly bad.
I killed the Elder in Leather Armour (Bronze Shield and weapons) using just Neck Tails, Roast Meat and Mushrooms and had no issues really with Stamina. I think I ran out once in a manner that gave me a little trouble.
If you don't spam attacks or sprint when you don't need to then Stamina isn't a issue. Unless you are running a long distance. That is the only time I ever wish I had more than the rested and Eik buff. Pulling a loaded cart along a dirt road can take a while.
For me the Day length is of bigger concern than stamina.
