Then again, I'm not someone who buys games for graphics. Another favorite of mine with art style is Journey.
I'll be crucified for this, but to me they come off as lazy, not an art style. The Long Dark, Sea of Theives, and even one of this developer's former titles Deep Rock Galactica, are what I'd consider truly "art styles". They're art, but at a very high fidelity. This is not art, it's a design decision that comes across as very lazy.
But does that, in any way, detract from the things that make this an absolutely killer game to play? For me, no. For you? Idk...

I'm not here to crucify you, I'd just recommend you take an entry level art class at a CC and/or a graphics design or 3d art class.
Either way, you should elaborate more on why you think it isn't art if you feel strongly about it.
I think it's just one of those things though. Boils down to personal preferences. Like: I TOTALLY just don't get some of the adult cartoons out there like Southpark or even Family Guy, American Dad... Rick and Morty (like... what the hell??) took some time for me to fully appreciate any of them... it's not for everyone.
It's good to know you are a graphical snob though - Personally: I'm an audiophile and will NEVER again own any lesser product than my current Bose headphones... for example. I may miss out on Dr Dre's latest headphones or whatever... but I'm ok with that because I've found what I like and no one on earth will displace that in me.
So for you: maybe you just absolutely NEED a certain quality of graphics to even begin to start to enjoy the game play mechanics. And that's cool!
