You're making no sence at all about aliens and conspiracies., but im guessing you're talking about "extraterrestrials"...
You kill deer, boar, small birds, wolves, dragons, buffalo-like creatures called Lox, and horrible mosquito monsters. Most of them are very aggressive bastards. The deer and the birds however, will never fight you. Also, two of the bosses are animals, one a mighty stag spirit and one a dragon mother. You literally take the dragon's tears and it's sad, but it's also a ferocious monster.
Much of what you fight is monsters like undead or forest spirits or little goblin monsters rather than beasts.
Also if it makes you feel better, it's some kind of weird viking afterlife realm, not earth.
That's most of what I can think of at the moment, hope it helps guide your decision.

1. Graphics are actually just fine. I know it seems off putting at first glance, but it looks really good when you are in the game. I'm sure there will be improvements down the road with their development of the game, but it looks really good when you get in and start playing it to be honest.
2. I mean, you could possibly play this without killing animals that dont attack you first. But you wont have any armor and the only weapon beyond the stone/wood stuff would be a knife. Everything else takes leather scraps or deer hides. (correction: you'll be able to wear Troll Hide Armor set)
3. Lorewise - there's a problem with that added at the end. This is a Norse Mythology based game (Vikings) and to keep true to the lore, they would hunt wildlife for their hide and their meat. A person who would not eat meat or hunt for food (even farmers) would be shamed to no end and would be an outcast from that society. They would have likely been raided and killed within a year of being an outcast.
It is possible, but will be very difficult.
the thing is that back in the time we didn't have food complements with synthetic or industrial processed protein... and growing beans as a vegetal protein source isn't always possible. Have a look at Iceland where growing plants is a challenge. I've met people there who have never eaten an apple. Their diet consisted 100% of meat and fish.
What people tend to forget is that veganism is a luxury, and wasn't always possible in the middle ages (remember, the viking age is about 800 - 1070), especially not in the scandinavian countries. It was probably more common in the middle east though.
Anyway, a survival game necessarily means hunting for food, which implies killing animals.
Edit: Or probably PETA heaven.

PETA are one of the biggest animal killing organisation....
You don't have to kill animals if you use console commands.
You can have a lot of fun building huge structures and exploring.
Of course you do get over the graphic art style, it was the main thing that initially put me off buying but I'm pleased I did.

Nahh "PETA", kills an insane, number of pets they "Rescue" but this is off topic.
they aren't actually about animals, just the money associated, with activism.
Edit* PETA has a 66% kill rate, of all "rescues", as per a study from 2019-2020, allegedly.

Yeah I am aware but I meant in comparison to other animal killing companies like the whole meat industry. But yes thats really offtopic.
