Same here, no mods either.
My boy and I have 6 hives for the both of us and I have regular chest overflowing with honey but then we don't eat meals and drink mead like it's going out of fashion...only when we need to going into a combat situation.
You are absolutely free to do what you want, but when you are blaming a game because of your own ignorance, I am going to call you on it. I too can do what I want, it's my right :P
I mean /sure/ I suppose I could go do something else. Farm wood, Copper, Iron, Silver, Dark metal, Core wood. Hides, crops...or build my house / base / food court / shopping mall...
But that's like work. I want instant gratification.

This is me, I have 6 in my single player game, and I have over a stack of honey in storage, and like 20-30 on me and I eat that ♥♥♥♥ every 300 seconds if I am out exploring (it has high hp regen on it).
You also forget the fermentor takes days to actually ferment the stuff, least with the mead bases it does.
And if you wanna cry about how long it takes to make the mead.... I have 6 fermenters going, with room to add more... but even what I have is a bit overkill.
So far, I found only one queen bee.
Me personally I built a whole keg shack to increase my brewing capacity partly to dispose of excess honey. Now I have excess potions and I'm abusing the crap out of them.
Now Ive no clue if this is actually true or not, wiki has zero info on the matter. For me personally, I've broken around 6 or 7 wild hives, and have only gotten 2 Queens.
Ive never seen the queens on top of the structure in my own world, and I dont know if they clip under the map. The two that I have seen drop, dropped to the ground right under the hive.
